Keto Chicken Alfredo

Ingredients:

  • 2 boneless, skinless chicken breasts

  • Salt and black pepper, to taste

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup unsalted butter

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp dried oregano

  • 1/4 tsp red pepper flakes (optional)

  • Fresh parsley, chopped, for garnish

  • Zucchini noodles or shirataki noodles, for serving (optional)

Instructions:

  1. Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.

  2. Make the Alfredo Sauce: In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant. Be careful not to burn the garlic. Pour in the heavy cream and bring to a simmer.

  3. Simmer the Sauce: Reduce the heat to low and stir in the grated Parmesan cheese, unsalted butter, garlic powder, onion powder, dried oregano, and red pepper flakes (if using). Continue to simmer the sauce, stirring occasionally, until the cheese is melted and the sauce is thickened to your desired consistency, about 5-7 minutes.

  4. Slice the Chicken: While the sauce is simmering, slice the cooked chicken breasts into thin strips or bite-sized pieces.

  5. Combine Chicken and Sauce: Once the sauce is ready, return the sliced chicken to the skillet and toss to coat it evenly with the Alfredo sauce. Cook for an additional 2-3 minutes, or until the chicken is heated through.

  6. Serve: Remove the skillet from the heat. Taste the sauce and adjust the seasoning with salt and black pepper, if needed. Garnish with chopped fresh parsley. Serve the Keto
